Cauliflower Fried Rice

Who would’ve thought that fried rice before and after bariatric surgery could actually help you along your weight loss journey?! This delicious, low carb recipe is surely a winner. Veggies don’t have to boring or flavorless and this cauliflower fried rice recipe will prove that to you. Pair this with my Orange Chicken recipe and you’ve got yourself a delicious dinner!

Ingredients

  • 24 oz frozen riced cauliflower

  • 2 eggs, beaten

  • 1 cup frozen peas/carrots

  • 1 cup corn

  • 1 cup green onions

  • 2 garlic cloves

  • 1 tbsp dried ginger

  • 1 tbsp rice vinegar

  • 3 tbsp low-sodium soy sauce

  • 2 tbsp avocado oil

Directions

Heat oil in a pan over medium heat. Add eggs and scramble until they are not runny anymore. Add garlic, ginger, and green onions - stir for about 1 minute. Then add riced cauliflower, peas/carrots, and corn. Stir in vinegar and low-sodium soy sauce. Cook until vegetables are tender and cauliflower rice is slightly browned. Serve hot, portion out 1/4-1/2 cup and enjoy with 1/4-1/2 cup of a protein food such as chicken or shrimp!
