Mediterranean Couscous Salad
You may have already eaten couscous along your weight loss journey BUT have you tried pearl couscous yet?! Pearl couscous has a texture like none other and is a perfect topping to amplify your next salad. Loaded with fiber and giving you a little extra protein than your average grain product, give this recipe a go!

Ingredients
1 cup pearl couscous
1.5 cups water
1 cup cherry tomatoes
1 cup diced cucumbers
1 cup chickpeas
1 cup spinach
1/4 cup fat-free feta cheese
1/8 cup olive oil
1/8 cup apple cider vinegar
1 tbsp Italian seasoning
Directions
Boil water in a pot, add couscous and cover with a lid. Cook until no water remains. Remove from heat and let cool. Dice tomatoes and cucumbers. Add to cooled couscous, chickpeas, feta cheese and spinach. Stir in olive oil, vinegar, and Italian seasoning. Portion out 1/4-1/2 cup and pair with a quality protein!
